- Stone & Skillet English Muffin
- 2lb pork butt
- 2 slices of Spam (optional)
- American cheese
- Pineapple Chutney:
- 2 tablespoons vegetable oil
- 1 teaspoon crushed red pepper flakes
- 1 large sweet onion, minced
- 4 inch piece fresh ginger root, peeled and minced
- 1 large yellow bell pepper, diced
- 1 small pineapple, peeled and diced
- 1/2 cup brown sugar
- 1 1/2 tablespoons curry powder
- 1/2 cup apple cider vinegar
- Salt and pepper
preparation
- Rub the pork butt with salt and pepper and place in a slow cooker on low for 16 hours on low
- The next day, remove pork butt from slow cooker and shred with forks
- Heat small pot on med-high and add oil. Saute red pepper flakes, onion, ginger, and bell pepper until soft
- add the rest of the ingredients and turn the pot to med-low heat
- Allow to cook, stirring occasionally, for 30 minutes
- Add mixture to a blender and blend until smooth
- If using Spam, heat a small pan and fry Spam slices in a small amount of oil until golden brown
- To assemble sandwich, stack cheese, Spam, pork, and chutney.
