- 1 Stone & Skillet Breakfast Sandwich
- 2 eggs, beaten
- 1 teaspoon butter
- Salt and Pepper
- ¼ nduja sausage
- Arugula
- 1 slice Tillamook cheese
preparation
Preheat the broiler and cut the muffin in half. Press out the nduja sausage into a patty and place it on the bottom muffin. Place the Tillamook cheese on the top muffin and place under the broiler until the cheese is melted and the sausage is sizzling. Take out and place on a plate.
Heat a small nonstick pan on medium-high heat and add butter. Wait for butter to stop foaming and add beaten eggs. With a fork constantly whisk the eggs until they come together. Take the eggs off the heat while there’s a little bit of liquid egg inside and season with salt and pepper. Carefully fold the omelette in half and then in half again. Place on top of nduja sausage.
Top egg with arugula and the top muffin.
