STONE & SKILLET LOBSTER ROLL
ingredients
- 1 Stone & Skillet Original English Muffin
- 1.5 lb Lobster
- Salt
- 1 Tablespoon Mayonaise ( we like Hellman’s)
- Butter
- Old Bay Seasoning (optional)
preparation
- Fill a large pot with water and turn on high heat
- Pour in enough salt to make it as salty as the sea
- Wait till boiling
- Boil lobster for 8 minutes per pound (12 minutes for this recipe)
- Pull lobster from the pot with tongs and plunge into ice water
- Wait until lobster is cool and shell
- Chop meat into 1/2 chunks and toss with mayonnaise
- Spread butter on cut sides of muffin and toast on a skillet
- Scoop lobster onto the muffin, dash with Old Bay, and top
- Serve with chips
